The recipe for Aunt Dimity Down Under was given to me by a born-and-bred Kiwi named Donna Rutten who welcomes travelers to her beautiful home with a pot of tea and a steady supply of her scrumptious homemade cookies. Aunt Dimity salutes her! And I thank her.
Preheat oven to 325 degrees Fahrenheit.
Line two baking sheets with parchment paper. Makes 18-25 medium cookies 1 cup rolled oats 1 cup all-purpose flour 1 cup desiccated coconut 1 cup sugar 4 teaspoons golden syrup or honey 1/2 cup butter (1 stick)]2 tablespoons boiling water 1 teaspoon baking soda Place oats, flour, coconut, and sugar in a large bowl. Mix well. In a small saucepan, combine the butter and the golden syrup (or honey) and heat until the butter is melted. Combine the baking soda and boiling water and add to the butter mixture. Then add the wet mixture to the dry ingredients. Mix well. Drop the dough by rounded tablespoons onto baking sheets lined with parchment paper. Bake for 12 minutes or until firm. Cool on wire racks. Munch contentedly with a nice cup of tea. |
